The à la carte menu features signature cocktails designed as true creations, combining expertise, marine inspirations, and subtle notes, to be enjoyed facing the sea, accompanied by elegant and gourmet bites. The Head Bartender

Maël Ribeiro

At Maison Douce Époque, fine dining meets the French art of living. The Bar des Dames is led by Head Bartender Maël Ribeiro, whose modern approach to mixology enhances the guests’ experience.

With nearly ten years of experience in the luxury hospitality and restaurant industry, he has worked at prestigious establishments in France and around the world. His career has taken him to Ashford Castle in Ireland, an iconic five-star hotel, where he creates seasonal cocktails inspired by ingredients from the garden and hosts spirits tastings for an international clientele.

He then continued his career at the Normandy in Deauville, a renowned establishment on the Normandy coast, as Assistant Head Bartender. There, he supervised the teams, organized masterclasses on premium spirits, and helped maintain the high service standards of the luxury hospitality industry.

A WSET-certified expert in wines and spirits, Maël is currently developing a menu of signature cocktails at Maison Douce Époque, inspired by seasonal ingredients, exceptional products, and the elegance of fine dining, in the spirit of the world’s leading establishments and Michelin-starred restaurants.
